Combining traditional bakers’ craft with a warm and creative communal space in Hampstead. We specialise in beautifully designed sourdough breads, as well as handmade viennoiserie and cakes baked fresh in the early hours each morning.
Our coffee beans are roasted by the experts at Adams & Russell, a small batch coffee roaster and “Great Taste” award winner.
Founded by a baker and a miller who have long dreamed of setting up a small bakery together, Heath Street Bakehouse was born out of the idea to bake truly beautiful breads using only the very finest flours. A natural partnership formed, combining the specialist knowledge of each. After years of working together on other projects, their pipe dream has finally become a reality with the opening of the Heath Street Bakehouse! Each loaf is a labour of love. Created using centuries-old traditional methods, we then hand-stencil our breads with beautiful designs to give them a creative twist and add the final flourish to their character.
All the flours we use are milled at Shipton Mill in Gloucestershire, where they have honed their craft over the last four decades, their mission being to extract the most flavour and nutrition from the grains as possible. Sustainable farming and supporting rare and exciting grains are at the heart of their philosophy. Bringing out the flavour of the grains in turn impacts on the breads and pastries, making the most of what nature has to offer.
Salah, the Baker, started his training at the age of 14, and went on to train and work at the famous Poilane bakery. Honing his craft in bakeries across Paris and London, he decided at last to take the step to open up shop in leafy Hampstead. Having worked his way up the ladder over the years through a variety of different sized bakeries and through all hours of the day and night, Salah’s dream was to go back to starting small, with the time to make each loaf truly beautiful and full of heart and soul. Supported by the artisan Miller, Salah carefully manages the balance of flavours with the science and rhythms of baking, learned over a lifetime of practice.
Using the very best ingredients, from the best grains to the best flours, is the touchstone of our philosophy at Heath Street Bakehouse. This goes hand in hand with affording our products the proper time and care they deserve, allowing each loaf all the time it needs to ferment to bring out the most delicious flavours and textures.
